Best Banana Bread Ever


Dear Dish Towel, 

 

I’m pretty sure they leave the bananas to rot on purpose; the fruit flies appreciate the gesture. I, on the other hand, am not always in the mood to make bread and wish they would just eat the daggon  bananas. Today, however, there’s motivation in the air, AKA “Daddy took the kids to the play gym” so, banana bread it is; I do, after all, make the best!

 

Mama’s Mini Banana Bread

1 Stick Soft *Organic Unsalted Butter

3 *Organic bananas  (super ripe)

1 C *Organic Brown Sugar

1 tsp Vanilla

1/4 C *Organic Applesauce

1 3/4 C *Organic Flour

1 tsp Salt

1 tsp Baking Soda

1 tsp Cinnamon

1 C chopped walnuts

 

Preheat oven to 325° and grease (I use butter) 3 mini loaf pans. Cream butter and sugar together then mash in bananas. Add vanilla and applesauce. I don’t like using more than one bowl so I put the flour on top of the wet mix, add the salt and baking soda on top and mix the dry together with a fork before mixing all of it with the wet. Add the walnuts and separate batter between 3 pans. Bake, center rack, 45 minute.

 

Let the loaves rest about 20 minutes before cutting, if you can; my gang tends to attack them straight out of the oven. Enjoy!
*I strive to use organic ingredients whenever I can but you can totally substitute their regular versions.

    Haha oh how I hate the fruit flies flying around the bananas! Aaah so annoying! But this sounds delicious : )))

      Fruit flies are one of the main reason some of the bananas never make it into bread, when I see them I tend to toss the bananas instead :-O

    I had no idea how easy it was to make banana bread! I love cooking but baking is not my strong point, so I’m glad this recipe is easy. I actually have some ripe bananas on hand, so I think I’ll give this a whirl.
    PS I love that you use organic ingredients.
